OKRO(OKRA) SOUP(SAUCE)
Ingredients:
250 gms of Okro(Okra)
2 fillets of smoked/grilled tasty fish - Nile perch/Snapper e.t.c...
200gms peeled and deveined medium sized fresh prawns
500gms of diced beef - Chuck/Gravy on the bone preferably
1T of bitter leaves
1 bunch of spinach(silverbeet) or English spinach
2T of palmoil(red)
Chicken stock - 2 stock cubes dissolved in a litre of warm water
1 medium sized onion(finely chopped)
1tsp of freshly chopped chillies(habenero) or bird's eye
Salt to taste

A Jar of "Bele" Versatile Tomato Sauce
Method:
1. Put washed chopped meat, chopped onion, half of stock, abit of the chilli paste and a reasonable pinch of salt, mix and allow to boil until meat is tender.
2. Add palmoil, prawns, ground dried prawns, grilled fiish, bring to the boil, making sure palmoil is completely mixed with base sauce
3. Add the Okra, spinach and remaining onion, then simmer for about 20 minutes and serve with Fufu,Rice,Couscous or with an accompaniment
of your choice. Fufu In a saucepan, bring to the boil some water and a pinch of salt, then reduce
the heat and add the fufu powder almost in a sprinkling manner,stirring vigorously in other to avoid it going lumpy and also to prevent it from sticking excessively to the sides and bottom of the saucepan
 


RECIPE FOR FISH (INDI) STEW

Ingredients:
A jar of Bele tomato relish or simmer sauce
500gms or about 4slices of Blue eye cod, Nile perch or any of your favourite.
1small onion finely chopped
salt to taste
half a teaspoon of chopped chillies(optional)
A teaspoon of grated ginger
One tablespoon of freshly chopped coriander
half a cup of fish/chicken/vegetable stock
200gms of green beans or brocolli


Method:
In a heavy base saucepan place cleaned and washed fish fillets, add chopped
onion,grated ginger,chopped chillies(optional),stock.
Bring to the boil for about 10minutes, add a jar of
Bele tomato relish(sauce)
Simmer for 10minutes then add the green beans or any vegetable of your choice,
cook for 5minutes and serve with boiled rice,steamed couscous or on it's own
garnish with chopped coriander. Yum!
